ENST 2305 Introduction to Food Studies

Students are introduced to the emerging and transdisciplinary field of food studies, which entails understanding the material, ecological, cultural, agential, and political foundations of the global food systems and foodways, as well as the many ways in which food shapes place, identities, and ideas around bodies, race, class, gender, nation, and empire. This transdisciplinary course covers important concepts, challenges, and solutions emerging out of our relationships with food.
