NUTR 3102 Functional Foods and Nutraceuticals

This is an introductory course on food that is enhanced to have more function by adding new ingredient or increasing the content of an existing ingredient. This course will introduce students to the concept of using food as a therapeutic option. Topics my also include information on the health benefits and risks of functional foods.
