Upon completion of this course, the student will:

    2. Identify key historical figures responsible for developing food service professionalism.
    3. Discuss the factors that influence the organization of modern kitchens.
    4. Explain the current changes in society that have affected the food service industry.

    1. Explain the importance of sanitation, temperature control, and identify potentially hazardous foods.
    2. Identify chemical, physical, and biological sources of contamination.
    3. Define categories of nutrients and explain their importance in a healthy diet as a menu option.

    3. Analyze the preparation and quality factors of the various types of meats, poultry, shellfish, and fish.
    4. Compare preparation methods for salads and dressings, sandwiches, hors d’oeuvres, vegetables, potatoes, and other starches.
    5. List the basic principles of baking, breads, cakes, cookies, pies, and pastries.

The grade will be determined using the Delaware Tech grading system:

90-100 = A
80-89 = B
70-79 = C
0-69 = F
